Canarian cuisine is one of the best on a national level, as it mostly has typical products and ingredients that can only be found on the islands. In addition, its cuisine is one of the main economic livelihoods.
When you travel to Tenerife, one of the most striking words is “Guachinche”. What are the guachinches? They are cozy and family restaurant, where they prepare little variety of dishes. They are characterized by the abundant typical food and in their great majority they treat of specialties of each family.
Mainly, the guanchinches are in the northern area of Tenerife, in La Orotava, Santa Úrsula or La Matanza de Acentejo. Although there are some scattered around the southern part of the island, too.
What do we eat today?

- Ropa Vieja, it is a recipe highly valued nationally, as they remind us of our grandmothers. It is a dish composed mainly of chickpeas. - Escaldón, is a food that tends to taste a lot to eat in winter, since it is eaten hot. Its main ingredients are: gofio and broth. Optionally and to your liking, you can add pieces of meat or bacon, cheese taquitos or red onion. It is a sauce that you can find in different flavors and ingredients. It can be cilantro mojo, avocado mojo, mojo picón, mojo de almendras, etc.
